French Onion Grilled Cheese

Sweet caramelized onions and nutty Gruyère cheese combine for a delicious take on the classic grilled cheese, sandwiched between slices of golden, crispy sourdough-style bread.

Ingredients

  • 1 loaf of Canyon Bakehouse Sourdough-Style bread
  • 2 C. Gruyère cheese, shredded
  • 2 Small yellow onions, thinly sliced
  • 4 Tbsp. Butter (plus extra for grilling)
  • 2 tsp. Olive oil
  • 1 tsp. Salt
  • 1 tsp. Black pepper
  • 1 tsp. Fresh thyme leaves (optional)
  • 4 tsp. Dijon mustard (optional, for extra flavor)

Directions

  • Add the sliced onions and cook slowly, stirring occasionally, for about 20-25 minutes until deep golden brown.
  • Cook for another 2 minutes, then set aside.
  • Begin to assemble the sandwiches by spreading Dijon mustard (if using) on one side of each slice of bread.
  • Layer ¼ cup of shredded Gruyère cheese on each slice of bread.
  • Spread the caramelized onions evenly over half of the slices, then top with the remaining cheese.
  • Place the other bread slices on top to form 4 sandwiches.
  • Heat a skillet over medium heat.
  • Spread a thin layer of butter on the outside of each sandwich.
  • Place sandwiches in the skillet and cook for 3-4 minutes on each side, pressing lightly with a spatula, until the bread is golden brown and the cheese is melted.
  • Serve warm!
