Caprese Grilled Cheese

Elevate your grilled cheese game with this Caprese-inspired sandwich! Featuring fresh tomatoes, creamy mozzarella, fragrant basil, and a sweet balsamic reduction, all melted together between slices of golden, crispy sourdough bread.

Ingredients

  • 1 loaf of Canyon Bakehouse Sourdough-Style bread
  • 8 oz. Fresh mozzarella, sliced
  • 2 Medium tomatoes, sliced
  • Fresh basil leaves (about 8-10 leaves)
  • 1/4 C. Balsamic vinegar
  • 2 Tbsp. Butter
  • Salt and pepper to taste

Directions

  • Prepare the balsamic reduction: In a small saucepan over medium heat, bring the balsamic vinegar to a gentle boil. Reduce the heat to low and simmer until it thickens and reduces by half (about 5 minutes). Set aside to cool slightly.
  • Assemble the sandwiches: Take two slices of sourdough bread for each sandwich. On one slice, layer mozzarella, tomato slices, and fresh basil leaves. Drizzle with balsamic reduction and season with salt and pepper. Top with the other slice of bread.
  • Heat a skillet or griddle over medium heat with a tablespoon of melted butter.
  • Place the sandwiches on the skillet and cook for 3-4 minutes on each side, pressing down gently with a spatula, until the bread is golden brown and the cheese is melted, adding more butter as needed.
  • Slice in half, serve warm, and enjoy!
