1 Garlic Clove, finely grated

Vinaigrette

2 Carrots, grated or julienned

2 Scallions, julienned

¼ C. Fresh cilantro leaves

2 Tbsp. Unseasoned Rice Vinegar

2 Tbsp. Tamari or Soy Sauce

1 Tbsp. Olive Oil

1 tsp. Toasted Sesame Oil

½-inch Piece Fresh Ginger, peeled and grated
Tamari Ginger Sauce

8 Slices Canyon Bakehouse Ancient Grain Bread, toasted

1 C. Fresh Spinach leaves
-
12-oz. Canned Lunchmeat, such as Spam, sliced to ¼”-thick, pan-fried and finished with Tamari Ginger Sauce

1 C. Prepared Sesame Carrot Slaw, dressed in vinaigrette

Directions

- Whisk the ingredients for the vinaigrette together and set aside.
- Combine the julienned carrots, scallions and cilantro leaves in a bowl and toss with the vinaigrette.
- Whisk the ingredients for the tamari ginger sauce together and set aside.
- Place a skillet with the olive oil over medium-high. Fry the sliced lunchmeat until lightly browned on one side, about 6 minutes. Turn to brown the other side.
- Add the tamari ginger sauce and cook until crisp, about 2 more minutes, and transfer to a plate.
- Sauté the spinach in the tamari pan or keep it fresh and allow it to wilt slightly on the bun under the hot lunchmeat.
- Assemble four sandwiches on the toasted bread with spinach (sautéed or fresh), pan-fried lunchmeat and dressed slaw.
