Chickpea Salad Sammie

  • ½ C. Canned Chickpeas, mashed
  • ½ Avocado, mashed
  • 1 Tbsp. Plain Yogurt (optional)
  • ½ Tsp. Fresh Lemon Juice
  • 1 Tbsp. Green Onion, chopped
  • 1 Tbsp. Parsley, chopped
  • Salt and Pepper, to taste
  • Lettuce or Sprouts
  • 4 slices Canyon Bakehouse Mountain White Bread


  1. In a small mixing bowl, combine the first 7 ingredients.
  2. Toast the bread, if desired and top two slices with chickpea salad and lettuce/sprouts. Top the sammies with the remaining two slices of bread and serve.
