Chickpea Salad Sammie
- ½ C. Canned Chickpeas, mashed
- ½ Avocado, mashed
- 1 Tbsp. Plain Yogurt (optional)
- ½ Tsp. Fresh Lemon Juice
- 1 Tbsp. Green Onion, chopped
- 1 Tbsp. Parsley, chopped
- Salt and Pepper, to taste
- Lettuce or Sprouts
- 4 slices Canyon Bakehouse Mountain White Bread
- In a small mixing bowl, combine the first 7 ingredients.
- Toast the bread, if desired and top two slices with chickpea salad and lettuce/sprouts. Top the sammies with the remaining two slices of bread and serve.
