English Muffin Pizzettes

We made two delicious pizza recipes for our English Muffins, both Original and Honey Whole Grain. One is an Italian favorite and the other an American classic.

Ingredients

Spicy Margherita Pizzette
  • 1 Canyon Bakehouse Honey Whole Grain English Muffin
  • 1 Garlic Clove (rub)
  • 1 Tbsp. Olive Oil
  • ½-1 tsp. Red Chili Flakes, to taste
  • 1 Can San Marzano Tomatoes
  • 2 Sprigs Fresh Basil
  • 2 oz. Fresh Mozzarella
Honey BBQ Chicken Pizzette
  • 1 Canyon Bakehouse Honey Whole Grain English Muffins
  • ¼ C. Shredded Rotisserie Chicken
  • 2 oz. Shredded Mild Cheddar or Mozzarella
  • 1 Tbsp. Honey BBQ Sauce
  • 1 Cob Corn
  • Butter
  • Salt and Pepper
  • Sliced Red Onion

Directions

Spicy Margherita Pizzette

  1. Cut open the English Muffin.
  2. Cut a raw garlic clove in half and rub it over each side of the English Muffin.
  3. Place 1 Tbsp. of olive oil into a frying pan over medium heat.
  4. Add red chili flakes to the warm oil and allow it to gently sizzle.
  5. Add 1 can of crushed tomatoes to the red chili oil and bring to a simmer.
  6. Cook the tomatoes for about 10 minutes. Season with 1 tsp salt and pepper to taste.
  7. Top each side of the English Muffin with about 2 Tbsp. of spicy tomato sauce. Reserve the remaining sauce for later use.
  8. Top the sauce with fresh basil leaves, halved cherry tomatoes and mozzarella.
  9. Place the pizzette under a broiler on the middle rack. Broil until the edges of the English Muffin are brown and the cheese begins to melt.

 

Honey BBQ Chicken Pizzette

  1. Preheat the oven to 400 degrees.
  2. Remove the husk from the corn cobs.
  3. Spread the corn with butter before sprinkling with salt and pepper.
  4. Wrap the corn in tin foil.
  5. Roast the corn in the oven for about 30 minutes, turning half-way through.
  6. Remove the corn from the foil and allow to cool completely before cutting the kernels from the cob.
  7. Spread each side of the English Muffin with honey BBQ sauce.
  8. Top the BBQ sauce with diced roasted chicken.
  9. Sprinkle the chicken with sliced red onion, roasted corn kernels and shredded cheese.
  10. Place the pizzette under a broiler on the middle rack. Broil until the edges of the English Muffin are brown and the cheese begins to melt.
