Our soft, chewy bagels are grilled and tossed in lime vinaigrette with avocado, citrus fruits and radicchio.
Ingredients

1 Radicchio, shredded

4 Canyon Bakehouse Plain Bagels, halved, grilled or toasted

1 Avocado, sliced

4 Citrus fruits, such as pomelo, grapefruit, tangelo and mandarin oranges, peels cutaway and sliced

Lime Vinaigrette (see below)

2 Scallions, finely chopped

3 Tbsp. Fresh Lime Juice

1 Tbsp. Champagne vinegar

1 Clove Garlic, grated
-
1 tsp. Dijon Mustard

½ C. Extra Virgin Olive Oil

Salt and Pepper, to taste
Lime Vinaigrette
Directions

- To make the lime vinaigrette, whisk the ingredients together until emulsified. Set aside.
- Divide the shredded radicchio onto 4 salad plates or one large platter.
- Cut the grilled or toasted bagel halves into quarters.
- Assemble the bagel pieces, sliced avocado and citrus fruits on top of the radicchio.
- Drizzle the salad with lime vinaigrette and top with chopped scallions.
