Cheesy Cauliflower Toasts

Cheesy cauliflower mash broiled on Honey Whole Grain English muffins until bubbly, and garnished with parsley and sweet paprika.

Ingredients

  • 1 Head Cauliflower, cut into florets

  • 2 Tbsp. Butter

  • ¼ C. Heavy Cream

  • Salt and Pepper, to taste

  • 3 oz. Gruyere Cheese, finely grated

  • 2 Canyon Bakehouse Honey Whole Grain English Muffins

  • 2 tsp. Chopped Fresh Parsley, for garnish

  • ½ tsp. Sweet Paprika, for garnish

Directions

  1. Place the cauliflower florets in a steaming basket over boiling water. Steam until just tender.
  2. Place the steamed cauliflower, butter and cream in a food processor. Chop finely until the mixture comes together. Season with salt and pepper to taste.
  3. Top each English muffin half with the cauliflower mash and sprinkle with shredded cheese. Place them on a lined baking sheet and broil until bubbly, about 2-4 minutes.
  4. Garnish with sweet paprika and fresh parsley to serve.
