With creamy avocado spread and lots of green veggies on toasted Ancient Grain Bread, this snack is sure to bring luck with every bite!
- 2 Slices Canyon Bakehouse Ancient Grain Bread, toasted
- ½ C. Arugula
- 1 Green Heirloom Tomato, sliced thick
- ½ Avocado,
- 1 tsp. Fresh Lemon Juice
- Sea Salt
- ¼ Cucumber, sliced
- Sesame Seasoning Mix
- In a small bowl, mash the avocado with the lemon juice. Set aside.
- Place arugula on each toast, then spread a dollop of mashed avocado mixture on top and sprinkle with sea salt.
- Add tomato and cucumber slices.
- Top with sesame seasoning mix and microgreens.
