Tamari Ginger Spam Sandwich with Sesame Carrot Slaw

Sliced Spam, lightly pan-fried with tamari ginger sauce and sandwiched with sesame carrot slaw on toasted Ancient Grain Bread.

Ingredients

Vinaigrette
  • 1 Garlic Clove, finely grated
  • 2 Tbsp. Olive Oil
  • 1 Tbsp. Toasted Sesame Oil
  • 3 Tbsp. Unseasoned Rice Vinegar
  • Salt and pepper, to taste
Sesame Carrot Slaw
  • 2 Carrots, grated or julienned
  • 2 Scallions, julienned
  • ¼ C. Fresh cilantro leaves
Tamari Ginger Sauce
  • 2 Tbsp. Unseasoned Rice Vinegar
  • 2 Tbsp. Tamari or Soy Sauce
  • 1 Tbsp. Olive Oil
  • 1 tsp. Toasted Sesame Oil
  • ½-inch Piece Fresh Ginger, peeled and grated

Directions

  1. Whisk the ingredients for the vinaigrette together and set aside.
  2. Combine the julienned carrots, scallions and cilantro leaves in a bowl and toss with the vinaigrette.
  3. Whisk the ingredients for the tamari ginger sauce together and set aside.
  4. Place a skillet with the olive oil over medium-high. Fry the sliced lunchmeat until lightly browned on one side, about 6 minutes. Turn to brown the other side.
  5. Add the tamari ginger sauce and cook until crisp, about 2 more minutes, and transfer to a plate.
  6. Sauté the spinach in the tamari pan or keep it fresh and allow it to wilt slightly on the bun under the hot lunchmeat.
  7. Assemble four sandwiches on the toasted bread with spinach (sautéed or fresh), pan-fried lunchmeat and dressed slaw.
