Grilled Pesto Chicken Sandwich

This delicious sandwich combines juicy grilled chicken, homemade pesto, a flavorful tomato spread, melted cheese, and fresh greens, all served on Canyon Bakehouse Brioche-Style Hamburger Buns.

Ingredients

Sandwich
  1. 1 Pkg. Canyon Bakehouse Brioche-Style HamburgerBuns (4 buns)
  2. 2 Boneless, skinless chicken breasts
  3. 4 Cheese slices (mozzarella, provolone, or your favorite)
  4. 1 C. Mixed greens (arugula, spinach, or lettuce)
  5. 1 Tbsp. Olive oil
  6. Salt and pepper to taste
Homemade Pesto
  1. 2 C. Fresh basil leaves
  2. 1/2 C.Parmesan cheese, grated
  3. 1/3 C. Pine nuts
  4. 2 Cloves garlic, minced
  5. 1/2 C. Extra virgin olive oil
  6. Salt and pepper to taste
Tomato Spread
  1. 1/2 C. Sun-dried tomatoes in oil, drained and finely chopped
  2. 1/4 C. Mayonnaise
  3. 1 Tbsp. Lemon juice

Directions

  1. In a food processor, combine the basil leaves, grated Parmesan cheese, pine nuts, and minced garlic. Pulse until finely chopped.
  2. With the processor running, slowly add the extra virgin olive oil until the mixture is smooth. Season with salt and pepper to taste. Set aside.
  3. In a small bowl, mix together the finely chopped sun-dried tomatoes, mayonnaise, and lemon juice. Set aside.
  4. Preheat your grill or skillet over medium-high heat.
  5. Slice the chicken breasts horizontally to create 4 thin cutlets.
  6. Rub the chicken with olive oil and season with salt and pepper.
  7. Grill or cook the chicken cutlets for about 4-5 minutes per side, or until fully cooked and juices run clear.
  8. During the last minute of cooking the chicken, place a slice of cheese on each cutlet and allow it to melt.
  9. Lightly toast the Brioche-Style Hamburger Buns on the grill or in a skillet.
  10. To assemble the sandwich, spread a generous amount of homemade pesto on the bottom half of each bun. Place a grilled chicken cutlet with melted cheese on top of the pesto. Add a layer of the tomato spread on top of the chicken, top with the mixed greens, and the top of the bun. Serve and enjoy!
