Gluten-Free Fried Chicken Sliders

Satisfy your slider cravings with crispy gluten-free fried chicken, a flavorful paprika mustard sauce, pickles, and fresh lettuce – the perfect addition to any gathering.

Ingredients

  • 1 Pkg. Canyon Bakehouse Hawaiian Sweet Rolls (6 rolls) 1 C. Dill pickle slices
  • 6 Lettuce leaves
Fried Chicken
  • 1 Pound Boneless, skinless chicken breasts, cut into 6 equal-sized pieces
  • 1 C. Gluten-free all-purpose flour
  • 1 tsp. Paprika
  • 1/2 tsp. Garlic powder
  • 1/2 tsp. Onion powder
  • Salt and pepper to taste
  • 2 Large eggs, beaten 1 C. Gluten-free breadcrumbs (or crushed gluten-free cornflakes for extra crunch)
  • Cooking oil, for frying
Paprika Mustard Sauce
  • 1/2 C. Mayonnaise
  • 2 Tbsp. Dijon mustard 1 tsp. Paprika
  • Salt and pepper to taste

Directions

  1. In a shallow bowl, mix together the gluten-free all-purpose flour, paprika, garlic powder, onion powder, salt, and pepper.
  2. In another bowl, beat the eggs.
  3. Place the gluten-free breadcrumbs (or crushed cornflakes) in a third bowl.
  4. Heat about 1 inch of cooking oil in a large skillet or deep fryer to 350°F.
  5. Dredge each piece of chicken in the seasoned flour mixture, then dip it into the beaten eggs, and finally coat it with the gluten-free breadcrumbs (or crushed cornflakes), pressing the crumbs onto the chicken to adhere.
  6. Carefully place the coated chicken pieces into the hot oil and fry for about 5-7 minutes per side, or until the chicken is golden brown and cooked through. The internal temperature should reach 165°F. Drain on paper towels.
  7. While the chicken is frying, prepare the Paprika Mustard Sauce by whisking together mayonnaise, Dijon mustard, paprika, salt, and pepper in a small bowl.
  8. Wash and dry lettuce leaves.
  9. To assemble the sliders, slice the rolls in half.
  10. Spread a generous amount of the Paprika Mustard Sauce on both halves of each roll.
  11. Place a piece of fried chicken on the bottom half of each roll.
  12. Top the chicken with pickles and lettuce leaves and the top half of the rolls.
  13. Secure each slider with a toothpick to hold it together, if needed.
  14. Serve immediately and enjoy!
