Citrus Panzanella

Our soft, chewy bagels are grilled and tossed in lime vinaigrette with avocado, citrus fruits and radicchio.


  • 1 Radicchio, shredded
  • 4 Canyon Bakehouse Plain Bagels, halved, grilled or toasted
  • 1 Avocado, sliced
  • 4 Citrus fruits, such as pomelo, grapefruit, tangelo and mandarin oranges, peels cutaway and sliced
  • Lime Vinaigrette (see below)
  • 2 Scallions, finely chopped
Lime Vinaigrette
  • 3 Tbsp. Fresh Lime Juice
  • 1 Tbsp. Champagne vinegar
  • 1 Clove Garlic, grated
  • 1 tsp. Dijon Mustard
  • ½ C. Extra Virgin Olive Oil
  • Salt and Pepper, to taste


  1. To make the lime vinaigrette, whisk the ingredients together until emulsified. Set aside.
  2. Divide the shredded radicchio onto 4 salad plates or one large platter.
  3. Cut the grilled or toasted bagel halves into quarters.
  4. Assemble the bagel pieces, sliced avocado and citrus fruits on top of the radicchio.
  5. Drizzle the salad with lime vinaigrette and top with chopped scallions.
